Coachella Valley Bakery Dodges Hurdles To Make Classic Cakes

CATHEDRAL CITY-A Coachella Valley bakery is celebrating 25 years of whipping up tasty treats.

But not without hurdles.

A blaze burned part of their successful business exactly three months ago today.

This local bakery enjoys the sweet smell and taste of success.

This month marks a major milestone for the pastry swan, 25 years and counting here in the desert.

“The good thing about being in the desert for 25 years is we’ve got to watch people get married, have their baby showers, and then now we’re doing their kids, their kids wedding cakes, ” said Deborah Quin,, Patry Swan Bakey Owner. “Which is fabulous when they come back and say ‘You did our wedding cake and now my daughter is getting married.'”

The day we stopped by the bakery, they were building a five layer cake for someone’s anniversary, along with lots of valentine goodies, croissants, brownies, date bars, and muffins.

They need a lot of ingredients for all those tasty treats.

Here’s the breakdown for one week: on average they use more than 3,000 eggs, 400 pounds of flour, 200 pounds of sugar, and 120 pounds of butter.

The family business has eight employees and customers from all over the southwest.

Business was going so well they had two locations but they were burned out by a fire last fall on El Paseo in Palm Desert. And, now their hoping to come back bigger and better.

For now the bakery operates out of their cathedral city location, while waiting to find out when the building for their retail store will be repaired and they’re trying to get the word out that they are definitely still in business.

“When we first heard about the fire, we thought, ‘Oh we’ve got to be open by Christmas.’ And, here we are, Valentine’s Day. So it is disheartening but our customers are loyal.”

Loyal … Like Leah Dawson.

The pastry Swan Bakery made her wedding cake four years ago, and now she turns to them for other special occasions, like valentines day cupcakes for her kids’ school.

“They are always willing to do whatever crazy thing I ask them for,” she says.”Like a Gucci bag, Chanel bag, a pair of shoes. And the kids love the flavor so that’s why we come.”

Over the past 25 years, the Pastry Swan has discovered the recipe for success.
